Place pears in the bowl of a food processor; pulse until puréed.
Transfer 3 cups puréed pears to a saucepan. Add sugar; cook, stirring occasionally, until bubbling, about 15 minutes. Stir in cinnamon; cook, stirring frequently, until thick, about 15 minutes more.
Meanwhile, inspect one 1-pint jar for cracks and ring for rust, discarding defective ones. Immerse in simmering water until pear butter is ready, at least 5 minutes. Wash new, unused lid and ring in warm soapy water.
Pack pear butter into the hot, sterilized jar, filling to within ¼ inch of top. Run a clean knife or thin spatula around inside of jar to remove any air bubbles. Wipe rim with a moist paper towel to remove any residue. Top with lid and screw ring on tightly. Store in the refrigerator.
