Ingredients

  • 4 ½cupsshredded carrots
  • 1(8 ounce) cancrushed pineapple, undrained (Optional)
  • ¾cupraisins
  • ½cupsugar or to taste
  • 2tablespoonssugar, or to taste
  • ½cupmayonnaise
  • 1 ½tablespoonsfreshly squeezed lemon juice

  • Directions

    Gather all ingredients.

    Combine carrots, pineapple with juice, raisins, ½ cup plus 2 tablespoons sugar (or to taste), mayonnaise, and lemon juice in a large bowl; mix well.

    Refrigerate for 2 hours before serving for flavors to meld for best results.
