Ingredients

  • potatoes, halved
  • 2tablespoonsolive oil
  • 4teaspoonsyellow curry powder (such as Madras)
  • 1/2teaspoongarlic powder
  • 1/4teaspoonground ginger
  • 1/4teaspoonpaprika
  • salt and freshly ground black pepper to taste
  • cilantro or parsley

  • Directions

    Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper or grease lightly.

    Place potatoes in a bowl, drizzle with olive oil, and stir until well coated. Combine curry powder, garlic powder, ginger, and paprika, and sprinkle over potatoes. Toss until well combined. Spread potatoes out in a single layer on the baking sheet.

    Bake in the preheated oven until tender, golden, and crispy, 25 to 35 minutes. Shake or turn potatoes every 10 to 15 minutes to ensure they don’t burn.

    Season with salt and pepper, garnish with chopped parsley or cilantro, and serve.
