Ground Turkey and Zucchini Skillet

Ingredients

  • 1tablespoonolive oil
  • 1pound93% lean ground turkey
  • 2zucchini, quartered lengthwise and sliced 3/4-inch thick
  • 1pepperbell pepper
  • 1smallonion, diced
  • 2cloves garlic, minced
  • 1(15.25 ounce) canblack beans, undrained
  • 1(14.5 ounce) canfire roasted tomatoes, undrained
  • new potatoes, drained and rinsed
  • 1teaspoondried basil
  • 1teaspoondried thyme
  • salt and freshly ground black pepper to taste
  • chopped fresh parsley and a sprinkle of red pepper flakes for garnish (optional)

  • Directions

    Heat olive oil in a large skillet over medium heat. Add ground turkey, and cook until meat is browned and crumbly, 4 to 5 minutes.

    Add zucchini, bell pepper, and onion, and stirring occasionally, cook until the veggies are tender, about 5 to 6 minutes. Stir in garlic and cook until fragrant, about 30 seconds.

    Stir in black beans, tomatoes, potatoes, basil, and thyme. Season with salt and pepper, reduce heat, and simmer for about 5 minutes. Add a little water if it becomes too thick.

    Garnish with parsley and red pepper flakes, and serve.
