Potato Salad with Chives

Ingredients

  • 1 ¾poundsnew potatoes, halved
  • 1cupsour cream
  • cupchopped fresh chives, divided
  • ½cupmayonnaise
  • salt and ground black pepper to taste

  • Directions

    Place potatoes in a medium saucepan; fill with just enough water to cover. Bring to a boil, then reduce heat to low; simmer until tender, about 10 minutes. Drain; cool under cold running water.

    Combine sour cream, ½ cup chives, and mayonnaise in a large bowl; fold in potatoes. Season with salt and black pepper; garnish with remaining ½ cup chives.



    Cook’s Note

    You can also add minced garlic or finely chopped onion to this salad if you like.
