Ingredients

  • 1tablespoonolive oil
  • 1largeonion, chopped
  • 3clovesgarlic, minced
  • 4smallzucchini, diced
  • 1fresh poblano chile pepper, seeded and chopped
  • 1(15 ounce) canblack beans, rinsed and drained
  • 1cupfrozen whole kernel corn
  • teaspoon salt, or to taste

  • Directions

    Heat oil in a large skillet over medium-high heat. Add onion and garlic; cook and stir until translucent.

    Add zucchini and poblano; cook until soft. Stir in beans and corn until heated through; season with salt.
