Ingredients

  • 1cupwater
  • ½cupuncooked quinoa, rinsed
  • ¼cupchopped dried pineapple
  • ¼cupchopped dried mango
  • ¼cupsweetened coconut flakes
  • ¼cupdry-roasted macadamia nuts, chopped
  • 2tablespoonsregular mango chutney
  • 1tablespoonhot mango chutney

  • Directions

    Bring water and quinoa to a boil in a saucepan over medium heat. Cover the saucepan, reduce the heat, and simmer until water is absorbed, 10 to 12 minutes.

    Off heat, stir pineapple, mango, coconut, macadamia nuts, and mango chutneys into quinoa until thoroughly combined. Serve hot.
